8 oz rice noodles

1 lb chicken breast, diced into bite-sized pieces

3 tablespoons soy sauce

1 tablespoon rice vinegar

2 tablespoons hoisin sauce

1 tablespoon chili paste (adjust for spice preference)

2 tablespoons vegetable oil

1 red bell pepper, sliced

1 green bell pepper, sliced

3 cloves garlic, minced

1 inch fresh ginger, minced

1/2 cup unsalted peanuts

4 green onions, chopped

Sesame seeds for garnish

Fresh cilantro for garnish (optional)

Instructions
 

Prepare the Noodles:

    - Boil a large pot of water and cook the rice noodles according to the package instructions. Once cooked, drain and set aside.

      Marinate the Chicken:

        - In a bowl, combine diced chicken with soy sauce, rice vinegar, hoisin sauce, and chili paste. Let it marinate for at least 15 minutes.

          Stir-Fry Vegetables:

            - In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the sliced red and green bell peppers, and stir-fry for about 3-4 minutes until they are tender-crisp. Remove and set aside.

              Cook the Chicken:

                - In the same skillet, add the remaining tablespoon of oil. Add the marinated chicken and stir-fry for about 5-7 minutes or until fully cooked, golden, and slightly crispy. Stir in minced garlic and ginger, and cook for an additional minute until fragrant.

                  Combine Ingredients:

                    - Return the stir-fried bell peppers to the skillet with the chicken. Add the cooked rice noodles and toss everything together, ensuring that the noodles are well coated with the sauce.

                      Finish the Dish:
