2 cups all-purpose flour

1 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/2 cup unsalted butter, melted and cooled

2 large eggs

1 cup buttermilk (or milk with 1 tablespoon vinegar added)

2 teaspoons vanilla extract

2 cups peeled, cored, and finely diced apples (preferably Granny Smith or Honeycrisp)

1/2 cup chopped walnuts or pecans (optional)

1/4 cup brown sugar for topping

1 teaspoon cinnamon for topping

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it with butter.

    Combine Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, ground cinnamon, and nutmeg until well combined.

      Prepare Wet Ingredients: In another bowl, whisk together melted butter, eggs, buttermilk, and vanilla extract until smooth and well combined.

        Mix Wet into Dry: Slowly pour the wet mixture into the dry ingredients, stirring gently. Be careful not to overmix; it's okay if there are a few lumps remaining.

          Fold in Apples and Nuts: Gently fold in the diced apples and chopped nuts (if using) until just combined.

            Fill Muffin Tin: Divide the batter evenly among the muffin cups, filling each about 2/3 full.

              Prepare Topping: In a small bowl, mix together the brown sugar and 1 teaspoon of cinnamon. Sprinkle this mixture over the tops of the muffins for added sweetness and a crunchy topping.
