For the Dough:

4 cups all-purpose flour

1/4 cup granulated sugar

1 packet (2 1/4 tsp) instant yeast

1/2 cup whole milk, warmed

1/2 cup unsalted butter, melted

2 large eggs

1 teaspoon vanilla extract

1/2 teaspoon salt

For the Filling:

2 cups apples, peeled, cored, and diced (preferably Granny Smith or Honeycrisp)

1/2 cup brown sugar

1 tablespoon cinnamon

1/4 cup unsalted butter, softened

1 tablespoon lemon juice

1/2 teaspoon nutmeg (optional)

For the Cream Cheese Frosting:

8 oz cream cheese, softened

1/4 cup unsalted butter, softened

1 1/2 cups powdered sugar

1 teaspoon vanilla extract

Pinch of salt

1-2 tablespoons milk (adjust for consistency)

Instructions
 

Prepare the Dough:

    - In a large bowl, combine the warm milk, melted butter, sugar, and yeast. Let it sit for about 5 minutes until frothy.

      - Add the eggs, salt, and vanilla extract. Mix well.

        - Gradually add the flour, one cup at a time, kneading until the dough is smooth and elastic (about 5-7 minutes). If the dough is too sticky, add a bit more flour.

          - Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

            Prepare the Filling:

              - In a medium bowl, combine the diced apples, brown sugar, cinnamon, softened butter, lemon juice, and nutmeg. Toss until the apples are thoroughly coated and set aside.

                Assemble the Rolls:

                  - Preheat your oven to 350°F (175°C).

                    - After the dough has risen, punch it down and roll it out on a floured surface into a large rectangle (about 16x12 inches).

                      - Spread the apple filling evenly over the dough.

                        - Starting from one long edge, carefully roll the dough into a tight log. Pinch the seam to seal.

                          - Cut the log into 12 equal pieces and arrange them in a greased 9x13 inch baking dish.

                            Second Rise:

                              - Cover the rolls with a damp cloth and let them rise again for about 30 minutes until puffy.
