1 cup apple cider

1 ½ cups all-purpose flour

¾ cup granulated sugar

½ cup brown sugar, packed

1 tsp baking powder

½ tsp baking soda

1 tsp ground cinnamon

½ tsp ground nutmeg

½ tsp salt

½ cup unsweetened applesauce

2 large eggs

¼ cup vegetable oil

1 tsp vanilla extract

Cinnamon sugar (for coating: ¼ cup granulated sugar mixed with 1 tsp ground cinnamon)

Prepare the Cider Reduction: In a small saucepan, bring the apple cider to a boil over medium-high heat. Reduce heat and simmer until it thickens and reduces to about ½ cup, approximately 10-15 minutes. Remove from heat and let it cool.

    Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a donut pan with cooking spray or oil.

      Mix Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.

        Combine Wet Ingredients: In another bowl, mix the cooled apple cider reduction, applesauce, eggs, vegetable oil, and vanilla extract until thoroughly blended.

          Combine Mixtures: Pour the wet mixture into the dry ingredients and stir gently until just combined. Do not overmix; it's okay if there are a few lumps.

            Fill the Donut Pan: Using a piping bag or a zip-top bag with the corner snipped off, fill each donut cavity about ¾ full with the batter.
