Ingredients

1 lb boneless chicken thighs

1 cup buttermilk

1 cup all-purpose flour

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cayenne pepper (adjust to taste)

Salt and pepper, to taste

Oil for frying

1/2 cup honey

2 tablespoons hot sauce (like Frank's RedHot)

1 tablespoon butter, melted

1 teaspoon apple cider vinegar

8 flaky biscuits (store-bought or homemade)

Instructions

Marinate the Chicken: In a bowl, combine the buttermilk, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper. Add the chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour (or overnight for better flavor).

Prepare the Hot Honey Sauce: In a small saucepan over low heat, combine the honey, hot sauce, melted butter, and apple cider vinegar. Stir until smooth and heated through. Remove from heat and set aside.

Coat the Chicken: In a shallow dish, add the flour, along with additional salt and pepper to taste. Remove the chicken from the marinade and allow excess buttermilk to drip off. Dredge each piece in the flour mixture, pressing to ensure an even coating.

Heat the Oil: In a deep skillet or fryer, heat about 2 inches of oil to 350°F (175°C).

Fry the Chicken: Carefully place the coated chicken thighs in the hot oil, frying in batches if necessary to avoid overcrowding. Fry for about 5-7 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F/74°C). Remove and place them on a cooling rack lined with paper towels.

Prepare the Biscuits: While the chicken is frying, bake the biscuits according to package instructions or a homemade recipe. Ideally, they should come out warm and fluffy.

Assemble the Biscuits: Split the warm biscuits in half. Place a piece of fried chicken on the bottom half of each biscuit. Drizzle generously with the hot honey sauce, then top with the biscuit lid.

Serve and Enjoy: Serve the Hot Honey Chicken Biscuits warm with extra hot honey on the side for drizzling.
