Homemade Apple Cinnamon Swirl Loaf

2 cups all-purpose flour

1 ½ teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

½ cup plain yogurt or sour cream

2 medium apples, peeled, cored, and diced (about 2 cups)

¾ cup brown sugar, packed

1 tablespoon ground cinnamon (for the swirl)

¼ cup chopped walnuts or pecans (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.

    Mix Dry Ingredients: In a bowl, whisk together the flour, baking powder, baking soda, salt, ground cinnamon, and nutmeg. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.

        Add Eggs and Vanilla: Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

          Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, alternating with yogurt (or sour cream). Start and end with dry ingredients. Mix until just combined.

            Prepare Apples: Fold the diced apples and nuts (if using) gently into the batter.

              Make the Cinnamon Swirl: In a small bowl, mix the brown sugar and ground cinnamon together. Set aside.

                Layer the Batter: Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon-sugar mixture on top. Pour the remaining batter and top with the rest of the cinnamon-sugar mixture. Use a knife to gently swirl the mixture through the batter.

                  Bake: Bake in the preheated oven for 50-60 minutes or until a toothpick inserted into the center comes out clean.

                    Cool: Once baked, allow the loaf to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
