High Protein Ground Turkey Stuffed Sweet Potato

Ingredients
  

2 large sweet potatoes

1 lb ground turkey

1 cup black beans, rinsed and drained

1 cup corn (frozen or canned)

1 small red onion, diced

2 cloves garlic, minced

1 tsp cumin

1 tsp smoked paprika

½ tsp chili powder

Salt and pepper, to taste

½ cup shredded cheese (cheddar or Monterey Jack)

¼ cup fresh cilantro, chopped (for garnish)

2 tbsp olive oil

Optional: Greek yogurt or sour cream for topping

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Sweet Potatoes: Wash the sweet potatoes thoroughly. Poke several holes in each potato with a fork. Rub them with olive oil and sprinkle with salt. Place them on a baking sheet and roast in the oven for 45-60 minutes, or until they are tender.

      Cook the Ground Turkey: While the sweet potatoes are roasting, heat a large skillet over medium heat. Add a tablespoon of olive oil, then add the diced red onion and sauté until soft, about 3-4 minutes. Add the minced garlic and cook for another minute.

        Add the Turkey and Spices: Increase the heat to medium-high and add the ground turkey to the skillet. Use a spatula to break it apart as it cooks. Season it with cumin, smoked paprika, chili powder, salt, and pepper. Cook until the turkey is browned and fully cooked, about 6-8 minutes.

          Incorporate Beans and Corn: Stir in the black beans and corn, mixing well to combine. Cook for another 2-3 minutes until heated through. Remove from heat.

            Assemble Stuffed Sweet Potatoes: Once the sweet potatoes are roasted and soft, remove them from the oven. Let them cool slightly, then make a long slit down the center of each potato. Gently fluff the insides with a fork.

              Fill the Sweet Potatoes: Spoon the turkey mixture generously into each sweet potato. Top with shredded cheese.

                Melt the Cheese: Return the stuffed sweet potatoes to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.

                  Garnish and Serve: Remove from the oven and garnish with fresh cilantro. Add a dollop of Greek yogurt or sour cream if desired. Serve hot.
