Ingredients
  

2 cups whole wheat pasta (penne or fusilli)

1 lb grilled chicken breast, diced

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1/2 cup bell peppers (any color), diced

1/2 cup chickpeas, rinsed and drained

1/4 cup fresh parsley, chopped

1/4 cup feta cheese, crumbled (optional)

1/4 cup Greek yogurt

2 tablespoons olive oil

2 tablespoons lemon juice

1 teaspoon garlic powder

Salt and pepper to taste

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil and cook the whole wheat pasta according to package instructions until al dente. Drain and rinse under cold water to cool down. Set aside.

    Prepare the Dressing: In a small bowl, whisk together the Greek yogurt, olive oil, lemon juice, garlic powder, salt, and pepper until smooth and well combined.

      Combine Ingredients: In a large mixing bowl, add the cooked and cooled pasta, grilled chicken, cherry tomatoes, cucumber, red onion, bell peppers, chickpeas, and parsley. Gently toss until mixed well.

        Add Dressing: Pour the prepared dressing over the pasta salad and toss until all ingredients are evenly coated.

          Feta Cheese Sprinkle: If using, sprinkle the crumbled feta cheese on top and give it a gentle mix.

            Chill and Serve: Cover the salad with plastic wrap or a lid and refrigerate for at least 30 minutes to allow flavors to meld. Stir before serving.
