Hearty Veggie Rolls with Peanut Sauce

For the Veggie Rolls:

6 Rice paper wrappers

1 cup purple cabbage, thinly sliced

1 cup carrots, julienned

1 avocado, sliced

1 red bell pepper, sliced

1 cup cucumber, julienned

1/2 cup fresh mint leaves

1/2 cup fresh cilantro leaves

1/2 cup bean sprouts

1/4 cup chopped peanuts (for garnish)

For the Peanut Sauce:

1/2 cup creamy peanut butter

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon honey or maple syrup

1 teaspoon sesame oil

1 teaspoon sriracha (optional, for heat)

1-3 tablespoons warm water (to adjust consistency)

Instructions
 

Prepare the Veggie Filling: In a large bowl, combine the sliced cabbage, carrots, avocado, bell pepper, cucumber, mint, cilantro, and bean sprouts. Toss gently to mix the ingredients thoroughly.

    Make the Peanut Sauce: In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey (or maple syrup), sesame oil, and sriracha (if using). Add warm water, one tablespoon at a time, until the desired consistency is reached. The sauce should be smooth and creamy but not too runny.

      Soften the Rice Paper Wrappers: Fill a shallow dish with warm water. Dip one rice paper wrapper into the warm water for about 10-15 seconds, or until it becomes soft and pliable. Carefully lay it flat on a clean surface.

        Assemble the Rolls: Place a small amount of the veggie filling (about 2-4 tablespoons) on the bottom third of the softened rice paper wrapper. Fold the bottom edge over the filling, then fold the sides in and roll it up firmly but gently, creating a neat roll. Repeat this process with the remaining wrappers and filling.

          Cut and Serve: Once all the veggie rolls are assembled, you can cut them in half diagonally for bite-sized pieces. Arrange them on a serving platter and sprinkle with chopped peanuts for added crunch.

            Serve with Peanut Sauce: Serve the hearty veggie rolls with the peanut sauce on the side for dipping.
