Healthy Homemade Granola

Ingredients
  

2 cups rolled oats

1/2 cup nuts (walnuts, almonds, or pecans), roughly chopped

1/2 cup seeds (pumpkin seeds, sunflower seeds, or chia seeds)

1/2 cup unsweetened shredded coconut

1/4 cup honey or maple syrup

1/4 cup coconut oil (melted)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup dried fruits (raisins, cranberries, or apricots), diced (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, combine the rolled oats, chopped nuts, seeds, shredded coconut, ground cinnamon, and salt. Mix well to evenly distribute the dry ingredients.

      In a separate bowl, whisk together the honey (or maple syrup), melted coconut oil, and vanilla extract until well combined.

        Pour the wet mixture over the dry ingredients and stir until all the dry ingredients are evenly coated.

          Spread the granola mixture evenly onto the prepared baking sheet, pressing it down slightly to help it clump together.

            Bake in the preheated oven for 20-25 minutes, stirring halfway through to ensure an even golden color. Keep an eye on it to avoid burning.

              Once the granola is golden brown, remove it from the oven and let it cool completely on the baking sheet. It will become crunchy as it cools.

                Once cooled, stir in the dried fruits if using, then transfer the granola to an airtight container for storage.
