1 pre-made graham cracker crust

1 cup crushed pineapple, drained

1 cup coconut cream

1/2 cup sweetened condensed milk

1/2 cup sour cream

1/4 cup shredded coconut (toasted)

1 teaspoon vanilla extract

1 tablespoon fresh lime juice

1/4 teaspoon salt

Whipped cream (for topping)

Maraschino cherries (for garnish)

Instructions
 

Prepare the Base: Start by preheating your oven to 350°F (175°C). If using a homemade graham cracker crust, bake it according to the package instructions or until lightly golden and firm. Allow it to cool completely.

    Mix the Filling: In a large mixing bowl, combine the crushed pineapple, coconut cream, sweetened condensed milk, sour cream, shredded coconut, vanilla extract, lime juice, and salt. Stir until all ingredients are well combined and the mixture is smooth.

      Assemble the Pie: Pour the filling mixture into the cooled graham cracker crust, spreading it evenly with a spatula.

        Bake & Cool: Place the pie in the preheated oven and bake for about 20-25 minutes, until the edges are set but the center still has a slight jiggle. Remove from the oven and let it cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours until fully chilled and set.
