1 lb ground turkey

2 cups mixed bell peppers (red, yellow, green), sliced

1 cup snap peas, trimmed

1 small onion, sliced

3 cloves garlic, minced

1 inch piece of ginger, grated

3 tablespoons soy sauce (low sodium preferred)

2 tablespoons teriyaki sauce

1 tablespoon sesame oil

1 tablespoon olive oil

1 teaspoon cornstarch (optional, for thickening)

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Cooked rice or quinoa (for serving)

Instructions
 

In a large skillet or wok, heat the olive oil over medium-high heat.

    Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until it’s browned and fully cooked, about 5-7 minutes.

      Add sliced onions, bell peppers, snap peas, garlic, and ginger to the turkey. Stir-fry for about 3-5 minutes until vegetables are tender-crisp.

        In a small bowl, mix together the soy sauce, teriyaki sauce, and sesame oil. If you prefer a thicker sauce, dissolve the cornstarch in 1 tablespoon of water and stir it into the sauce.

          Pour the sauce over the turkey and vegetables in the skillet. Stir well to coat everything evenly and cook for an additional 2-3 minutes until the sauce is heated through and thickened slightly.

            Serve the stir fry over cooked rice or quinoa, and garnish with chopped green onions and sesame seeds.
