Ground Turkey Sweet Potato Skillet

Ingredients
  

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 red bell pepper, diced

1 medium onion, diced

3 cloves garlic, minced

1 tsp smoked paprika

1 tsp ground cumin

1/2 tsp chili powder

Salt and pepper to taste

2 tbsp olive oil or avocado oil

1 cup spinach or kale, chopped

Fresh cilantro or parsley, for garnish

Optional: Sliced avocado and lime wedges for serving

Instructions
 

Prepare Ingredients: Start by peeling and dicing the sweet potatoes and chopping the onion, bell pepper, garlic, and greens. Set aside.

    Cook Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and season with salt and pepper. Sauté for about 10-12 minutes, stirring occasionally, until the sweet potatoes are tender and slightly caramelized. Remove from the skillet and set aside.

      Sauté Veggies and Turkey: In the same skillet, add the remaining tablespoon of olive oil. Add diced onions and bell pepper, cooking until the onions are translucent, about 5 minutes. Add minced garlic and sauté for another minute until fragrant.

        Add Ground Turkey: Increase the heat to medium-high and add the ground turkey to the skillet. Use a spatula to break it up as it cooks. Season with smoked paprika, cumin, chili powder, salt, and pepper, cooking until the turkey is browned and fully cooked, about 7-10 minutes.

          Combine Ingredients: Once the turkey is cooked, return the sweet potatoes to the skillet. Add the chopped spinach or kale, stirring everything together until the greens wilt and everything is heated through.

            Serve: Remove from heat and garnish with fresh cilantro or parsley. Optionally, serve with sliced avocado and lime wedges on the side for added flavor.
