Grilled Tandoori Chicken

4 pieces of bone-in chicken thighs or drumsticks

1 cup plain yogurt

2 tablespoons vegetable oil

2 tablespoons lemon juice

4 cloves garlic, minced

1 inch ginger, grated

2 tablespoons tandoori masala (store-bought or homemade)

1 teaspoon ground cumin

1 teaspoon paprika (for color)

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

Fresh cilantro, for garnish

Lemon wedges, for serving

Instructions
 

Prepare Marinade: In a large bowl, combine yogurt, vegetable oil, lemon juice, minced garlic, grated ginger, tandoori masala, ground cumin, paprika, salt, and black pepper. Whisk until smooth and well blended.

    Marinate Chicken: Add the chicken pieces to the marinade, ensuring they are fully coated. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, preferably overnight for best flavor.

      Preheat Grill: About 30 minutes before grilling, preheat your grill to medium-high heat (around 400°F / 200°C).

        Prepare Chicken for Grilling: Remove the marinated chicken from the fridge and let it sit at room temperature for about 15 minutes. While waiting, lightly oil the grill grates to prevent sticking.

          Grill the Chicken: Place the marinated chicken pieces on the grill, skin side down. Grill for about 5-7 minutes, or until you get nice grill marks. Flip the chicken and continue grilling for another 5-7 minutes.

            Check Doneness: Use a meat thermometer to check the internal temperature of the chicken; it should reach 165°F (75°C). If desired, you can cover the grill to cook more evenly.

              Rest and Serve: Once cooked, remove the chicken from the grill and let it rest for 5 minutes. This helps retain its juices. Garnish with fresh cilantro and serve with lemon wedges on the side.
