1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper to taste

Juice of 1 lime

For the Corn Salsa:

1 cup corn kernels (fresh or canned)

1/2 red onion, finely chopped

1 red bell pepper, diced

1 jalapeño, seeds removed and finely chopped

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

For the Creamy Garlic Sauce:

1/2 cup Greek yogurt

2 tablespoons mayonnaise

2 cloves garlic, minced

1 tablespoon lemon juice

Salt and pepper to taste

For the Bowl:

2 cups cooked brown rice or quinoa

1 avocado, sliced

Fresh cilantro for garnish

Lime wedges for serving

Marinate the Shrimp: In a large bowl, combine olive oil, smoked paprika, garlic powder, cumin, salt, pepper, and lime juice. Add the shrimp and toss to coat evenly. Allow to marinate for at least 20 minutes.

    Prepare the Corn Salsa: In a medium bowl, combine corn, red onion, red bell pepper, jalapeño, cilantro, lime juice, and salt. Mix well and let sit for flavors to meld.
