200g shrimp, peeled and deveined

200g scallops, cleaned

200g mussels, scrubbed and debearded

150g squid, cleaned and cut into rings

2 tbsp olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fish stock

1/2 cup heavy cream

1/2 cup dry white wine

1 tsp paprika

1/2 tsp cayenne pepper

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Crusty bread (for serving)

Instructions
 

Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent, about 3-4 minutes.

    Cook the Tomatoes: Add the cherry tomatoes to the skillet, cooking for an additional 2-3 minutes until they soften.

      Add the Seafood: Gently fold in the shrimp, scallops, mussels, and squid. Sauté for about 4-5 minutes, allowing the seafood to color slightly.

        Create the Sauce: Pour in the white wine and allow it to simmer for 2-3 minutes, then add the fish stock and heavy cream. Stir in the paprika and cayenne pepper, then season with salt and pepper to taste.

          Simmer the Cassolette: Reduce heat to low, cover the skillet, and let the mixture simmer for approximately 10 minutes, or until the mussels have opened and the seafood is cooked through.

            Serve: Remove from heat and ladle the seafood cassolette into serving dishes. Garnish with fresh parsley and serve with warm crusty bread for dipping.
