500g boneless chicken thighs, cut into bite-sized pieces

200g plain yogurt

2 tbsp lemon juice

2 tsp garam masala

2 tsp ground coriander

1 tsp ground cumin

1 tsp smoked paprika

1/2 tsp turmeric

1/2 tsp cayenne pepper

Salt and pepper to taste

For the Sauce:

2 tbsp vegetable oil

1 large onion, finely chopped

4 cloves garlic, minced

1-inch piece ginger, grated

2 green chilies, slit (adjust to taste)

1 tsp ground cumin

1 tsp ground coriander

1 tsp garam masala

1/2 tsp turmeric

400g canned tomatoes (crushed or chopped)

1/2 cup heavy cream

Fresh cilantro, chopped (for garnish)

Salt to taste

Instructions
 

Marinate the Chicken: In a large mixing bowl, combine the yogurt, lemon juice, and all spices for the marinade. Add salt and pepper to taste. Mix until well combined. Add the chicken pieces, ensuring they are well coated. Cover and marinate for at least 1 hour or overnight in the refrigerator for best results.

    Cook the Chicken: Preheat your grill or oven to medium-high (about 200°C / 400°F). Thread the marinated chicken onto skewers (if using wooden skewers, soak them in water to prevent burning). Grill the chicken for about 10-15 minutes, turning occasionally, until slightly charred and cooked through. Remove from the heat and set aside.

      Prepare the Sauce: In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and sauté until golden brown, about 7-10 minutes. Stir in the minced garlic, grated ginger, and green chilies. Cook for another 1-2 minutes until fragrant.

        Spice It Up: Add the ground cumin, ground coriander, garam masala, and turmeric to the onion mixture. Stir well to combine and cook for another minute.

          Add Tomatoes: Pour in the canned tomatoes and bring to a simmer. Let it cook for about 10 minutes, reducing slightly.

            Creamy Finish: Stir in the heavy cream and cook for an additional 5 minutes. Season with salt to taste.

              Combine: Gently fold the grilled chicken into the sauce, ensuring all the pieces are well-coated with the rich sauce. Simmer for another 5 minutes until heated through.
