Ingredients

1 cup all-purpose flour

2 tablespoons sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk (or non-dairy alternative)

1 large egg

2 tablespoons melted butter (or coconut oil for a dairy-free version)

1 teaspoon vanilla extract

1/2 cup blueberries (fresh or frozen)

Maple syrup, for serving

Whipped cream (optional, for garnish)

Instructions

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract.

Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.

Gently fold in the blueberries, ensuring they're evenly distributed throughout the batter.

Preheat a non-stick skillet or griddle over medium heat. Once hot, lightly grease it with cooking spray or a bit of butter.

Pour about 1/4 cup of batter for each pancake onto the skillet. Cook for 2-3 minutes, or until bubbles form on the surface and the edges appear set.

Flip the pancakes and cook for another 1-2 minutes, or until golden brown and cooked through.

Transfer pancakes to a plate and keep warm while you repeat with the remaining batter.

Serve warm, topped with maple syrup and a dollop of whipped cream if desired.
