Ingredients

1 lb chicken breast, cut into 1-inch cubes

1/4 cup olive oil

4 garlic cloves, minced

1/2 cup grated Parmesan cheese

2 tbsp fresh parsley, chopped

1 tsp dried oregano

1 tsp salt

1/2 tsp black pepper

1/2 tsp red pepper flakes (optional for spice)

Skewers (soaked in water if wooden)

Instructions

Marinate the Chicken: In a medium bowl, whisk together the olive oil, minced garlic, Parmesan cheese, chopped parsley, oregano, salt, black pepper, and red pepper flakes (if using). Add the cubed chicken to the marinade and toss well to coat. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Preheat Grill or Oven: Preheat your grill to medium heat. If using an oven, preheat to 400°F (200°C) and line a baking sheet with parchment paper.

Assemble Skewers: If using skewers, take the marinated chicken out of the fridge and thread the chicken cubes onto the skewers, leaving a little space between each piece for even cooking.

        Cook the Skewers:

          - Grilling: Place the skewers on the preheated grill. Cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

            - Baking: Arrange the skewers on the prepared baking sheet and bake for 15-20 minutes, turning halfway through, until the chicken is cooked through and golden.

Garnish and Serve: Remove the skewers from the grill or oven and let them rest for a few minutes. Drizzle with any remaining marinade, garnish with extra parsley or grated Parmesan if desired, and serve hot.
