Ingredients

8 oz (225g) mixed mushrooms (such as cremini, shiitake, and button), sliced

4 cloves garlic, minced

2 tablespoons olive oil

1 tablespoon unsalted butter

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and black pepper, to taste

4 slices rustic bread (such as sourdough or whole grain)

1 cup arugula (optional, for garnish)

Grated Parmesan cheese or crumbled feta (optional, for topping)

Instructions

Sauté the Mushrooms: In a large skillet, heat the olive oil and butter over medium-high heat. Add the sliced mushrooms and cook for about 5-7 minutes until they are golden brown and have released their moisture.

Add Garlic and Seasoning: Lower the heat to medium and add the minced garlic and thyme to the mushrooms. Sauté for an additional 2-3 minutes until the garlic is fragrant. Season with salt and black pepper to taste. Remove from heat and set aside.

Toast the Bread: While the mushrooms are cooking, preheat your oven to 400°F (200°C). Place the slices of rustic bread on a baking sheet and lightly drizzle with olive oil or butter. Toast in the oven for about 5-7 minutes until golden and crispy.

Assemble the Toasts: Once the bread is toasted, spoon the sautéed garlic mushrooms generously on top of each slice.

Garnish (Optional): If using, sprinkle grated Parmesan cheese or crumbled feta over the mushroom topping for added flavor. Finish with a handful of fresh arugula on each toast for a peppery bite.

Serve: Plate the Garlic Mushroom Toast and serve warm as an appetizer or a light meal.
