1 pound sirloin steak, cut into 1-inch cubes

1 pound baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or ½ tsp dried)

1 teaspoon fresh thyme, chopped (or ½ tsp dried)

Salt and pepper, to taste

2 tablespoons olive oil

1 tablespoon soy sauce (optional)

Fresh parsley, chopped (for garnish)

Prepare the Potatoes: In a large pot, bring salted water to a boil. Add the halved baby potatoes and boil for about 10-12 minutes, or until fork-tender. Drain and set aside.

    Sear the Steak: In a large skillet, heat the olive oil over medium-high heat. Season the steak bites with salt and pepper. Once the oil is shimmering, add the steak bites in a single layer. Sear for about 2-3 minutes on each side for medium-rare doneness. Remove the steak from the skillet and set aside.

      Cook the Potatoes: In the same skillet, add the butter, minced garlic, rosemary, and thyme. Once the butter is melted and bubbling, add the boiled potatoes. Toss gently to coat the potatoes in the garlic butter mixture. Cook for 5-7 minutes until they are golden brown and crispy, stirring occasionally.

        Combine Steak and Potatoes: Return the steak bites to the skillet with the potatoes. If using, drizzle the soy sauce over the steak and potatoes, and toss everything together until well combined and heated through, about 2-3 minutes.

          Serve: Transfer the garlic butter steak bites and potatoes to a serving dish. Sprinkle with fresh parsley and serve immediately.
