Garlic Butter Steak and Potatoes Skillet

Perfectly seared ribeye or sirloin steak meets tender baby potatoes in a rich garlic butter sauce, infused with fresh rosemary and thyme. This one-pan meal is quick to prepare, taking just 35 minutes from start to finish. Ideal for weeknight dinners or special occasions, it’s sure to impress family and friends. Ingredients
  

1 lb (450g) ribeye or sirloin steak, cut into bite-sized pieces

1 lb (450g) baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

Salt and pepper, to taste

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the potatoes: In a large skillet, add the baby potatoes and cover them with water. Bring them to a boil and cook for about 10-12 minutes until fork-tender. Drain and set aside.

    Sear the steak: In the same skillet, heat the olive oil over medium-high heat. Season the steak pieces with salt and pepper. Once the oil is hot, add the steak and sear for about 3-4 minutes on each side until browned and cooked to your desired doneness. Remove the steak from the skillet and set aside.

      Cook the garlic: In the same skillet, lower the heat to medium. Add 2 tablespoons of butter and let it melt. Add the minced garlic, rosemary, and thyme, cooking for about 1-2 minutes until fragrant.

        Combine steak and potatoes: Add the cooked baby potatoes back into the skillet. Drizzle with a little more olive oil if needed, and toss them with the garlic herb mixture. Season with salt and pepper to taste. Allow them to cook for about 3-4 minutes until slightly crispy and heated through.

          Finish with butter: Add the remaining 2 tablespoons of butter and the cooked steak back into the skillet. Toss everything together gently and cook for another 2-3 minutes until the steak is heated through and the butter is melted, creating a rich sauce.

            Serve: Remove from heat, garnish with fresh parsley, and serve hot.
