Garlic Bread Grilled Cheese

4 slices of thick-cut sourdough bread

1/2 cup (1 stick) unsalted butter, softened

4 cloves garlic, minced

1 teaspoon dried parsley

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup shredded mozzarella cheese

1 cup shredded sharp cheddar cheese

1/4 cup grated Parmesan cheese

Prepare the Garlic Butter: In a small mixing bowl, combine the softened butter, minced garlic, dried parsley, salt, and black pepper. Mix until well combined into a smooth garlic butter.

    Assemble the Sandwiches: Spread a generous layer of garlic butter on one side of each slice of sourdough bread. This will be the outer side that gets grilled.

      Cheese Layer: On the unbuttered side of two slices of bread, evenly distribute the mozzarella and cheddar cheeses. Sprinkle the grated Parmesan on top for an extra cheesy kick. Place the remaining slices of bread on top, buttered side facing out.

        Grill the Sandwiches: Preheat a frying pan or griddle over medium heat. Once hot, place the sandwiches in the pan. Heat for about 4-5 minutes or until the bottom is golden and crispy.

          Flip and Grill: Carefully flip the sandwiches using a spatula. Cook for another 4-5 minutes, pressing gently to ensure even grilling, until the other side is also golden brown and the cheese has melted.

            Slice and Serve: Remove the sandwiches from the heat. Let them sit for a minute before cutting them in half. Serve warm, ideally with a side of marinara for dipping or fresh salad.
