Ingredients
  

8 small corn or flour tortillas

1 cup diced fresh pineapple

1 cup diced strawberries

1 cup diced kiwi

1 cup diced mango

1 cup whipped coconut cream (made from chilled coconut cream)

2 tablespoons honey or agave syrup (optional)

1 teaspoon lime juice

1/2 teaspoon cinnamon

Fresh mint leaves for garnish

Lime wedges for serving

Instructions
 

Prepare the fruit: In a large mixing bowl, combine the diced pineapple, strawberries, kiwi, and mango. Drizzle with honey or agave syrup and lime juice. Toss gently to coat the fruits evenly. Set aside to marinate for about 10-15 minutes.

    Make the coconut cream: If using canned coconut cream, refrigerate a can overnight. Once chilled, scoop out the solid cream, leaving the liquid behind. Whip the solid cream until fluffy using a hand mixer or whisk. Set aside.

      Warm the tortillas: In a dry skillet over medium heat, warm the tortillas for about 30 seconds on each side until they are pliable. Keep them warm by wrapping in a kitchen towel.

        Assemble the tacos: Place about 1-2 tablespoons of the fruit mixture onto each tortilla. Top with a dollop of whipped coconut cream and a sprinkle of cinnamon.

          Garnish and serve: Garnish with fresh mint leaves and serve immediately with lime wedges on the side for an extra zing.
