3 large eggs

1/2 cup almond butter (or any nut butter of your choice)

1/4 cup honey or maple syrup

1 tsp vanilla extract

1 tsp baking soda

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/4 tsp ground ginger

1/4 tsp salt

1/2 cup dark chocolate chips (optional)

1/4 cup chopped pecans or walnuts (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease with cooking spray.

    Mix Wet Ingredients: In a large mixing bowl, whisk together the pumpkin puree, eggs, almond butter, honey (or maple syrup), and vanilla extract until smooth and well combined.
