This easy recipe features toasted English muffins topped with fluffy eggs, bubbling mozzarella, juicy cherry tomatoes, and savory sausage or bacon. Add some colorful bell peppers and a sprinkle of red pepper flakes for a kick. Perfect for a quick breakfast or brunch, these pizzas are ready in just 25 minutes. Don’t forget the fresh basil for that finishing touch!

Ingredients
  

2 English muffins, split in half

4 large eggs

1/2 cup cherry tomatoes, halved

1/2 cup shredded mozzarella cheese

1/4 cup cooked breakfast sausage, crumbled (or cooked bacon, chopped)

1/4 cup bell pepper, diced

1/4 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves for garnish

Olive oil or cooking spray (for greasing)

Instructions
 

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

    Lightly grease the cut sides of the English muffins with olive oil or cooking spray and place them cut-side up on the prepared baking sheet.

      In a bowl, whisk the eggs and season with salt and pepper. If you like a bit of heat, add the red pepper flakes.

        In a skillet over medium heat, lightly sauté the diced bell peppers to soften them slightly, about 2-3 minutes. Remove from heat.

          Spoon a small amount of beaten eggs onto each English muffin half, ensuring they are evenly distributed.

            Top the eggs with cherry tomatoes, cooked sausage or bacon, sautéed bell peppers, and finally sprinkle with shredded mozzarella cheese.

              Bake the breakfast pizzas in the preheated oven for about 12-15 minutes, or until the cheese is melted and bubbly and the eggs are set to your liking.

                Once done, remove from the oven and let cool for a minute.
