Easy Spinach & Ricotta Stuffed Shells

20 jumbo pasta shells

1 cup ricotta cheese

1 cup fresh spinach, chopped

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 egg

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper to taste

3 cups marinara sauce

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Shells: Bring a large pot of salted water to a boil. Add the jumbo pasta shells and cook according to package instructions until al dente. Drain and rinse under cold water to prevent sticking.

      Prepare the Filling: In a mixing bowl, combine the ricotta cheese, chopped spinach, half of the shredded mozzarella (1/2 cup), grated Parmesan cheese, egg, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined.

        Stuff the Shells: Carefully spoon the ricotta and spinach filling into each cooked shell using a teaspoon or piping bag. Place the filled shells seam-side up into a greased 9x13-inch baking dish.

          Add the Sauce: Pour the marinara sauce evenly over the stuffed shells, ensuring they are well covered. Sprinkle the remaining mozzarella cheese on top.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and slightly golden.

              Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves if desired. Serve hot and enjoy!
