Ingredients

12 large jumbo pasta shells

2 cups ricotta cheese

1 cup fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

1 large egg

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

2 cups marinara sauce

Fresh basil leaves, for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Cook the Pasta: In a large pot of salted boiling water, cook the jumbo shells according to package instructions until al dente, about 8-10 minutes. Drain and set aside to cool slightly.

Prepare the Filling: In a large mixing bowl, combine the ricotta cheese, chopped spinach, 1/2 cup of the mozzarella cheese, Parmesan cheese, egg, garlic powder, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

Stuff the Shells: Using a teaspoon or piping bag, carefully fill each jumbo shell with the spinach and ricotta mixture.

Assemble the Dish: Spread 1 cup of marinara sauce on the bottom of a baking dish. Arrange the stuffed shells on top of the sauce, then pour the remaining marinara sauce over the shells. Sprinkle the remaining mozzarella cheese on top.

Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

Garnish and Serve: Once baked, remove from the oven and let it sit for a few minutes. Garnish with fresh basil leaves before serving.
