Easy One-Pot Garlic Butter Broccoli Pasta

8 oz (225g) pasta of your choice (spaghetti or penne work well)

2 cups fresh broccoli florets

4 tablespoons unsalted butter

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

1/2 cup grated Parmesan cheese

1/2 teaspoon salt (to taste)

1/4 teaspoon black pepper (to taste)

3 cups vegetable broth or water

Zest of 1 lemon

Juice of 1/2 lemon

Fresh basil or parsley for garnish (optional)

Instructions
 

In a large pot or deep skillet, combine the pasta, broccoli florets, butter, minced garlic, and red pepper flakes (if using).

    Pour in the vegetable broth or water. Ensure that the liquid covers the pasta and broccoli; add more water if needed.

      Bring the mixture to a boil over medium-high heat, stirring occasionally to prevent the pasta from sticking.

        Once boiling, reduce the heat to medium-low and cover the pot. Let it simmer for about 10-12 minutes, or until the pasta is cooked al dente and the liquid is mostly absorbed.

          After cooking, remove the pot from heat. Stir in the grated Parmesan cheese, salt, black pepper, lemon zest, and lemon juice. Mix well until creamy.

            Taste and adjust seasoning as needed, adding more salt, pepper, or lemon juice to your liking.

              Serve hot, garnished with fresh basil or parsley if desired.
