2 medium russet potatoes, diced into small cubes

1 red bell pepper, chopped

1 green bell pepper, chopped

1 small onion, finely chopped

1 cup cooked breakfast sausage, crumbled (can substitute with bacon or plant-based sausage)

1 cup shredded cheese (cheddar or a blend)

4 large eggs

2 tablespoons olive oil

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley or chives for garnish

Prep the Potatoes: In a large skillet, heat the olive oil over medium heat. Once hot, add the diced potatoes. Season with salt, pepper, and smoked paprika. Cook for about 10 minutes, stirring occasionally, until they start to soften and brown.

    Add Veggies: Incorporate the chopped onions and bell peppers into the skillet. Sauté for an additional 5-7 minutes, until the vegetables are tender and the potatoes are golden brown.
