Easy Grilled Thai Chicken Skewers (With Peanut Sauce!)

Ingredients
  

For the Chicken Skewers:

1 lb (450g) boneless, skinless chicken thighs, cut into 1-inch cubes

2 tablespoons soy sauce

1 tablespoon fish sauce

1 tablespoon brown sugar

1 tablespoon lime juice

2 cloves garlic, minced

1 teaspoon ground coriander

1 teaspoon ground cumin

1 tablespoon vegetable oil

Skewers (wooden or metal)

For the Peanut Sauce:

1/2 cup creamy peanut butter

1/4 cup coconut milk

2 tablespoons soy sauce

1 tablespoon lime juice

1 tablespoon brown sugar

1 teaspoon ginger, grated

1/2 teaspoon crushed red pepper flakes (optional)

Chopped fresh cilantro, for garnish

Chopped peanuts, for garnish

Instructions
 

Marinate the Chicken:

    In a large bowl, whisk together soy sauce, fish sauce, brown sugar, lime juice, garlic, coriander, cumin, and vegetable oil. Add the chicken cubes and toss to coat. Cover and let marinate for at least 30 minutes in the refrigerator (or up to 2 hours for more flavor).

      Prepare the Peanut Sauce:

        In a small saucepan over low heat, combine peanut butter, coconut milk, soy sauce, lime juice, brown sugar, and grated ginger. Stir until smooth and heated through. If desired, add crushed red pepper flakes for spice. Remove from heat and set aside.

          Skewer the Chicken:

            Preheat your grill to medium-high heat. Thread marinated chicken cubes onto skewers, packing them slightly but leaving a bit of space in between for even cooking.

              Grill the Skewers:

                Place the skewers on the grill and cook for about 5-7 minutes on each side, or until they are charred and cooked through (internal temperature should reach 165°F / 75°C).

                  Serve:

                    Remove the skewers from the grill and let them rest for a couple of minutes. Drizzle with warm peanut sauce, and garnish with chopped cilantro and peanuts.

                      Enjoy:

                        Serve the skewers warm with additional peanut sauce on the side for dipping.
