8 oz linguine pasta

1 lb boneless, skinless chicken thighs, diced

4 tbsp unsalted butter

4 cloves garlic, minced

1/2 tsp smoked paprika

1/2 tsp cayenne pepper (adjust to taste)

1 tsp Italian seasoning

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1 cup heavy cream

1/2 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Zest of 1 lemon (optional)

Instructions
 

Cook the Linguine: In a large pot, bring salted water to a boil. Cook the linguine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Prepare the Chicken: In a large skillet, melt 2 tablespoons of butter over medium heat. Add the diced chicken thighs, season with salt, pepper, smoked paprika, cayenne pepper, and Italian seasoning. Cook until the chicken is browned and cooked through, about 6-8 minutes.

      Add Garlic and Tomatoes: Add the minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant. Stir in the halved cherry tomatoes and cook until they start to blister, about 2-3 minutes.

        Create the Cowboy Butter Sauce: Lower the heat and add the remaining 2 tablespoons of butter to the skillet. Once melted, stir in the heavy cream and Parmesan cheese, mixing well until the sauce is creamy. If the sauce is too thick, add reserved pasta water a little at a time until the desired consistency is reached.

          Combine Pasta and Sauce: Add the cooked linguine to the skillet, tossing to coat the pasta in the sauce. Allow to cook together for 2-3 minutes, letting the flavors meld. Adjust seasoning with more salt, pepper, or cayenne if needed.
