Easy Chipotle Ranch Grilled Chicken Burrito

Marinated grilled chicken is combined with hearty brown rice, black beans, crisp lettuce, juicy tomatoes, and melted cheddar cheese, all wrapped in a warm tortilla. Ingredients
  

2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cumin

Salt and pepper, to taste

1/2 cup chipotle ranch dressing (store-bought or homemade)

2 large flour tortillas

1 cup cooked brown rice

1 cup black beans, rinsed and drained

1 cup shredded lettuce

1 cup diced tomatoes

1/2 cup shredded cheddar cheese

1/4 cup fresh cilantro, chopped (optional)

Lime wedges, for serving

Instructions
 

Marinate the Chicken: In a bowl, mix together the olive oil, smoked paprika, garlic powder, onion powder, cumin, salt, and pepper. Add the chicken breasts, ensuring they are thoroughly coated in the marinade. Let marinate for at least 30 minutes (or up to 2 hours in the fridge).

    Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Once cooked, remove from the heat and let it rest for a few minutes before slicing.

      Assemble the Burrito: Lay one tortilla flat on a clean surface. Spread half of the chipotle ranch dressing over the tortilla. In the center, layer the cooked brown rice, black beans, sliced grilled chicken, shredded lettuce, diced tomatoes, and cheddar cheese. If desired, sprinkle with fresh cilantro.

        Wrap the Burrito: Fold in the sides of the tortilla and then roll it from the bottom up to enclose the filling tightly. Repeat with the second tortilla and remaining ingredients.

          Serve: Cut the burritos in half diagonally. Drizzle extra chipotle ranch dressing on top, and serve with lime wedges on the side for squeezing over the burrito.
