Ingredients

2 cups fresh peaches, peeled and diced

1 cup brown sugar, packed

1/2 cup granulated sugar

1/2 cup unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup buttermilk

1 teaspoon cinnamon (optional)

Powdered sugar, for dusting (optional)

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.

Prepare Peaches: Hold off on preparing the peaches just yet; set them aside.

Cream Sugar and Butter: In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. This should take about 3-4 minutes.

Add Eggs and Vanilla: Beat in the eggs, one at a time, incorporating well. Stir in the vanilla extract until combined.

Mix the Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and cinnamon (if using).

Combine Mixtures: Gradually add the dry ingredients to the creamed mixture, alternating with the buttermilk. Begin and end with the dry ingredients. Mix just until combined; do not overmix.

Fold in Peaches: Gently fold in the diced peaches into the batter, being careful not to break them apart too much.

Bake: Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.

Cool: Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Serve: Once cooled, dust with powdered sugar if desired. Slice and serve this delicious peach cake at room temperature or slightly warm with a scoop of vanilla ice cream.
