Easy Asian Cucumber Salad

This refreshing dish combines thinly sliced cucumbers with a tangy dressing made from rice vinegar, soy sauce, and sesame oil, all enhanced by garlic, ginger, and a kick of red chili. Perfect as a side dish or a light snack, it’s ready in just 25 minutes. Garnish with sesame seeds and fresh cilantro for an extra touch. Your taste buds will thank you!

Ingredients
  

3 medium cucumbers, thinly sliced

1 tablespoon salt

1 tablespoon sugar

2 tablespoons rice vinegar

2 tablespoons soy sauce

1 tablespoon sesame oil

1 garlic clove, minced

1 teaspoon fresh ginger, grated

1 small red chili, finely sliced (or to taste)

2 green onions, chopped

1 tablespoon sesame seeds

Fresh cilantro leaves for garnish (optional)

Instructions
 

In a large bowl, combine the sliced cucumbers with salt. Toss gently and let them sit for about 10 minutes to draw out excess moisture.

    After 10 minutes, rinse the cucumbers under cold water and drain well. Pat dry with a clean kitchen towel.

      In a separate bowl, whisk together the sugar, rice vinegar, soy sauce, sesame oil, minced garlic, and grated ginger until the sugar dissolves.

        Add the drained cucumbers to the dressing and toss to coat evenly.

          Stir in the sliced chili and chopped green onions, mixing everything together well.

            Sprinkle sesame seeds on top and garnish with cilantro leaves if desired.

              Let the salad sit for about 15 minutes at room temperature or in the fridge to allow the flavors to meld before serving.
