2 cups rolled oats

1 cup peanut butter (creamy or crunchy)

1/2 cup honey or maple syrup

1/2 cup brown sugar (packed)

1/2 cup mini chocolate chips (optional)

1/4 cup chopped nuts (optional)

1/4 cup dried fruit (raisins, cranberries, or apricots - optional)

1 teaspoon vanilla extract

pinch of salt

Instructions
 

In a large microwave-safe bowl, combine the peanut butter, honey (or maple syrup), and brown sugar. Microwave on high for 30 seconds to 1 minute, until the mixture is warm and easily stirrable. Stir until well combined.

    Add vanilla extract and a pinch of salt to the peanut butter mixture, stirring to combine well.

      In another bowl, mix together the rolled oats, mini chocolate chips (if using), chopped nuts (if using), and dried fruit (if using).

        Pour the oat mixture into the peanut butter mixture and stir until all the oats are coated evenly.

          Line an 8x8 inch baking dish with parchment paper and pour the granola mixture into it. Press down firmly with the back of a spoon or your hands to compact the mixture.

            Microwave the dish on high for an additional 30-60 seconds to help the granola bars set better.

              Allow the dish to cool completely at room temperature or put it in the fridge for about 30 minutes for quicker setting.

                Once set, lift the granola bars out using the parchment paper, and cut them into squares or rectangles.
