Crispy Hot Honey Feta Chicken

4 boneless, skinless chicken breasts

1 cup feta cheese, crumbled

1/2 cup all-purpose flour

2 large eggs, beaten

1 cup panko breadcrumbs

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1/4 cup hot honey (store-bought or homemade)

Fresh parsley, chopped (for garnish)

Olive oil, for frying

Instructions
 

Prepare the Chicken: Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness (about 1/2 inch). This ensures even cooking and helps them remain juicy.

    Marinate: Place the pounded chicken in a bowl. Drizzle with a little olive oil, and season with salt, pepper, and half of the smoked paprika. Let it marinate for about 20 minutes.

      Set Up Breading Station: In three separate shallow bowls, place the flour in the first, beaten eggs in the second, and panko breadcrumbs mixed with garlic powder, onion powder, the remaining smoked paprika, salt, and pepper in the third.

        Breading the Chicken: Dredge each chicken breast in flour, shaking off the excess. Then dip it in the beaten eggs, allowing the excess to drip off, and finally coat it thoroughly in the seasoned panko breadcrumbs.

          Fry the Chicken: Heat a generous amount of olive oil in a large skillet over medium-high heat. Once the oil is hot (you can test by dropping a breadcrumb in – it should sizzle), add the breaded chicken breasts. Cook for about 5-6 minutes on each side, until they're golden brown and crispy.
