Ingredients

1 lb fresh salmon fillet, skinless and diced into bite-sized pieces

½ cup all-purpose flour

½ cup breadcrumbs (Panko for extra crunch)

2 large eggs, beaten

Salt and pepper, to taste

3 tablespoons honey

2 tablespoons soy sauce

3 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon sesame oil

1 tablespoon fresh chives or green onions, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Prepare the Salmon: Begin by seasoning the diced salmon pieces lightly with salt and pepper. Set aside while you prepare the breading station.

Breading Station: In three separate bowls, place the flour, beaten eggs, and breadcrumbs. Ensure the breadcrumbs are evenly distributed.

Coat the Salmon: Take each salmon piece and dredge it in the flour first, shaking off any excess, then dip it into the beaten eggs, and finally coat it with breadcrumbs. Ensure each piece is fully covered.

Fry the Bites: In a large skillet, heat the olive oil and sesame oil over medium heat. Once hot, add the coated salmon bites in batches (don’t overcrowd the pan). Fry for about 3-4 minutes on each side until they are golden brown and crispy. Remove the cooked bites and place them on a paper towel to absorb excess oil.

Make the Honey Garlic Sauce: In a small bowl, combine the honey, soy sauce, and minced garlic. Mix well.

Glaze the Salmon Bites: In the same skillet used for frying, pour the honey garlic sauce over the cooked salmon bites. Allow them to cook in the sauce for an additional 2-3 minutes, gently tossing to coat and caramelize.

Garnish and Serve: Transfer the honey garlic salmon bites onto a serving plate. Sprinkle with chopped chives or green onions and serve with lemon wedges on the side for an extra zing!
