Ingredients

1 pound fresh salmon fillet, skin removed

1 cup panko bread crumbs

1/2 cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

Oil for frying (canola or vegetable oil)

For the Bang Bang Sauce:

1/2 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust according to spice preference)

1 teaspoon honey

1 teaspoon lime juice

Instructions

Prepare the Salmon:

    - Cut the salmon fillet into bite-sized cubes (about 1 inch). Pat them dry with paper towels to ensure they crisp up nicely.

      Set Up Breading Station:

        - In one bowl, place the flour mixed with salt, pepper, garlic powder, onion powder, and smoked paprika.

          - In a second bowl, whisk the eggs.

            - In a third bowl, place the panko bread crumbs.

              Bread the Salmon Bites:

                - Dip each cube of salmon in the flour first, shaking off any excess, then into the egg wash, and finally coat them well with the panko bread crumbs. Make sure they are evenly covered.

                  Cooking the Salmon Bites:

                    - Heat about 1 inch of oil in a deep skillet or frying pan over medium heat.

                      - Once the oil is hot (you can test it by dropping a breadcrumb to see if it bubbles), carefully add the salmon bites in batches, ensuring not to overcrowd the pan.

                        - Fry for about 2-3 minutes on each side, or until golden brown and crispy. Use a slotted spoon to remove them and place them on a paper towel-lined plate to drain excess oil.

                          Make the Bang Bang Sauce:

                            - In a small bowl, mix together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until well combined. Taste and adjust the sweetness or spice level if necessary.

                              Serve:

                                - Arrange the crispy salmon bites on a platter, and drizzle with the Bang Bang sauce or serve it on the side for dipping. Garnish with chopped green onions or sesame seeds for an extra touch.
