1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup all-purpose flour

1 tsp garlic powder

1 tsp onion powder

1/2 tsp salt

1/2 tsp black pepper

2 large eggs

1 cup panko breadcrumbs

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tbsp sriracha (adjust to taste)

1 tbsp lime juice

2 tbsp chopped scallions (for garnish)

Prepare the Chicken: In a bowl, combine the flour, garlic powder, onion powder, salt, and black pepper. Toss the chicken pieces in this seasoned flour until well coated.
