Ingredients

For the Chicken:

1 lb (450g) boneless chicken thighs, cut into bite-sized pieces

1 cup buttermilk

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon cayenne pepper (adjust to taste)

Oil for frying

For the Bang Bang Sauce:

½ cup mayonnaise

¼ cup sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 teaspoon lime juice

1 teaspoon honey (optional for sweetness)

For Garnish:

Chopped green onions

Sesame seeds

Lime wedges

Instructions

Marinate the Chicken: In a mixing bowl, combine the chicken pieces and buttermilk. Cover and refrigerate for at least 1 hour, or overnight for maximum flavor.

Prepare the Coating: In another bowl, whisk together the flour, garlic powder, onion powder, paprika, salt, black pepper, and cayenne pepper.

Make the Bang Bang Sauce: In a small bowl, mix together the mayonnaise, sweet chili sauce, sriracha, lime juice, and honey (if using). Adjust spice and sweetness levels to your preference. Set aside.

Heat the Oil: In a deep skillet or fryer, heat oil to 350°F (175°C). Use enough oil to fully submerge the chicken pieces for frying.

Coat the Chicken: Remove chicken from the buttermilk. One piece at a time, dredge the chicken in the flour mixture, ensuring each piece is well-coated. Shake off any excess flour.

Fry the Chicken: Carefully place coated chicken in the hot oil in batches to avoid overcrowding. Fry until golden brown and crispy, about 5-7 minutes. Use a slotted spoon to remove chicken and let drain on paper towels.

Toss in Bang Bang Sauce: In a large bowl, combine the crispy chicken with the Bang Bang Sauce. Toss until thoroughly coated.

Serve: Plate the chicken and garnish with chopped green onions and sesame seeds. Serve with lime wedges on the side for an extra zesty kick.
