Creamy Pasta Salad

8 oz (about 2 cups) rotini or fusilli pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup bell pepper, diced (any color)

1/4 cup red onion, finely chopped

1/2 cup black olives, sliced

1 cup frozen peas, thawed

1 cup mayonnaise

1/2 cup Greek yogurt

2 tablespoons Dijon mustard

1 tablespoon apple cider vinegar

1 tablespoon fresh dill, chopped (or 1 tsp dried dill)

Salt and pepper to taste

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the rotini or fusilli pasta and cook according to the package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

    Prepare the Vegetables: While the pasta is cooking, wash and chop the cherry tomatoes, cucumber, bell pepper, red onion, and black olives. Make sure the peas are thawed if using frozen.

      Make the Dressing: In a large bowl, whisk together the mayonnaise, Greek yogurt, Dijon mustard, apple cider vinegar, chopped dill, salt, and pepper until smooth and creamy.

        Combine Ingredients: In the large bowl with the dressing, add the cooked pasta, cherry tomatoes, cucumber, bell pepper, red onion, black olives, and peas. Gently fold all the ingredients together until everything is well coated with the creamy dressing.

          Chill and Serve: Cover the bowl with plastic wrap or a lid and refrigerate for at least 1 hour to allow the flavors to meld. Before serving, give the salad a good stir and adjust seasoning if necessary. Garnish with extra dill or a sprinkle of paprika if desired.
