Creamy Mushroom and Asparagus Chicken Penne

8 oz penne pasta

1 lb boneless, skinless chicken breasts, diced

2 cups asparagus, trimmed and cut into 2-inch pieces

1 cup cremini mushrooms, sliced

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1/2 cup grated Parmesan cheese

2 tbsp olive oil

1 tsp dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Sauté Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced chicken, season with salt and pepper, and cook for about 6-7 minutes until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the chopped onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic, sliced mushrooms, and asparagus pieces. Sauté for another 5-6 minutes until the mushrooms are tender and the asparagus is bright green.
