Creamy Garlic Shrimp Pasta

8 oz. fettuccine pasta

1 lb shrimp, peeled and deveined

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1/2 cup grated Parmesan cheese

2 tbsp olive oil

1 tbsp butter

1 tsp red pepper flakes (optional)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Cook the pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.

    Sauté the shrimp: In a large skillet over medium heat, add olive oil and butter. Once melted and hot, add the minced garlic and sauté for about 30 seconds until fragrant. Add the shrimp, season with salt and pepper, and cook until pink and opaque (about 2-3 minutes per side). Remove the shrimp from the skillet and set aside.

      Make the creamy sauce: In the same skillet, pour in the chicken broth and bring to a simmer. Allow it to reduce for about 2-3 minutes. Next, stir in the heavy cream and bring to a gentle simmer. Add in the Parmesan cheese and whisk until the cheese is melted and the sauce starts to thicken.

        Combine ingredients: Return the cooked shrimp to the skillet. If the sauce is too thick, add reserved pasta water a little at a time until you reach your desired consistency. Stir in red pepper flakes for a bit of heat, if using.

          Add the pasta: Toss the cooked fettuccine into the skillet, mixing thoroughly to coat the pasta in the creamy garlic sauce.

            Serve: Taste and adjust seasoning if needed. Garnish with freshly chopped parsley before serving.
