Creamy Chunky Tomato Soup

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 carrot, diced

1 celery stalk, diced

2 (14-ounce) cans of diced tomatoes in juice

1 cup vegetable broth

1 teaspoon dried basil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

1 cup heavy cream

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Crusty bread or grilled cheese for serving

Instructions
 

Sauté the Aromatics: In a large pot over medium heat, add the olive oil. Once hot, add the diced onion, carrot, and celery. Sauté for about 5-7 minutes, or until the vegetables are tender and the onion becomes translucent.

    Add Garlic & Tomatoes: Stir in the minced garlic and cook for another 1-2 minutes until fragrant. Then, add the canned diced tomatoes (with their juice), vegetable broth, dried basil, oregano, and red pepper flakes (if using). Bring to a boil.

      Simmer the Soup: Reduce the heat to low and let the soup simmer for about 15 minutes, allowing the flavors to meld together.

        Blend for Creaminess: Using an immersion blender, blend the soup until it reaches your desired consistency. For a chunkier texture, blend only half of the soup, leaving some chunky bits for texture. Alternatively, you can transfer half of the soup to a blender, blend until smooth, and return it to the pot.

          Add Cream: Stir in the heavy cream and let the soup simmer for an additional 5 minutes. Season with salt and pepper to taste.

            Serve: Ladle the soup into bowls and garnish with fresh basil leaves if desired. Serve hot with crusty bread or grilled cheese for dipping.
