Ingredients
  

1 tablespoon olive oil

1 pound chicken sausage (sliced)

1 small onion (diced)

2 cloves garlic (minced)

1 cup uncooked orzo pasta

4 cups chicken broth

1 cup heavy cream

1 cup spinach (fresh)

1 teaspoon Italian seasoning

Salt and pepper to taste

1/2 cup grated Parmesan cheese

Fresh parsley (chopped for garnish)

Instructions
 

In a large skillet, heat olive oil over medium heat. Add the sliced chicken sausage and sauté until browned, about 5-6 minutes. Remove from the skillet and set aside.

    In the same skillet, add the diced onion and cook for 3-4 minutes, until softened. Add the minced garlic and cook for another 1 minute until fragrant.

      Stir in the uncooked orzo pasta and pour in the chicken broth. Bring to a boil, then reduce heat to a simmer. Cover and cook for about 10-12 minutes, stirring occasionally, until the orzo is al dente and most of the liquid has been absorbed.

        Once the orzo is cooked, stir in the heavy cream, fresh spinach, Italian seasoning, and cooked chicken sausage. Season with salt and pepper to taste. Cook for an additional 2-3 minutes until the spinach wilts and everything is heated through.

          Remove from heat and stir in the grated Parmesan cheese until melted and creamy.

            Serve hot, garnished with fresh parsley.
