Creamy Chicken Pasta

8 oz (225 g) fettuccine or your favorite pasta

1 lb (450 g) boneless, skinless chicken breasts, diced

2 tablespoons olive oil

4 cloves garlic, minced

1 cup (240 ml) heavy cream

1 cup (100 g) grated Parmesan cheese

1 teaspoon dried Italian herbs (basil, oregano, thyme)

1 cup (150 g) cherry tomatoes, halved

1 cup (150 g) fresh spinach

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package directions until al dente. Drain and set aside, reserving about half a cup of the pasta cooking water.

    Sauté the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the diced chicken and season with salt and pepper. Cook until the chicken is golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Prepare the Sauce: In the same skillet, reduce heat to medium and add minced garlic. Sauté for about 1 minute until fragrant but not burned. Pour in the heavy cream and bring to a simmer.

        Combine Ingredients: Stir in the grated Parmesan cheese until melted and smooth. Add the dried Italian herbs and mix well. If the sauce is too thick, add a splash of the reserved pasta water to achieve desired consistency.

          Mix the Pasta: Return the cooked chicken to the skillet along with the halved cherry tomatoes and fresh spinach. Add the cooked pasta and gently toss everything together until well combined and the spinach is wilted.

            Serve: Taste and adjust seasoning with more salt and pepper if needed. Garnish with fresh basil leaves before serving.
