Creamy Chicken Lasagna with White Sauce

Lasagna Sheets: 9-12 sheets, depending on the pan size

Chicken Breast: 2 cups cooked and shredded

Spinach: 2 cups fresh or 1 cup frozen, thawed and drained

Mushrooms: 1 cup sliced

Garlic: 3 cloves, minced

Onion: 1 medium, finely chopped

Butter: 4 tablespoons

All-Purpose Flour: 1/4 cup

Milk: 3 cups

Chicken Broth: 1 cup

Cream Cheese: 8 oz, softened

Parmesan Cheese: 1 cup grated

Mozzarella Cheese: 2 cups shredded

Italian Seasoning: 1 teaspoon

Salt and Pepper: to taste

Olive Oil: 1 tablespoon

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Chicken: If you haven’t already, boil or bake the chicken breast until fully cooked. Shred and set aside.

      Prepare the White Sauce:

        - In a large saucepan, melt the butter over medium heat.

          - Add the chopped onion and minced garlic, sauté until translucent (about 3-4 minutes).

            - Stir in the mushrooms and cook until softened.

              - Sprinkle the flour over the mixture and stir for 1–2 minutes to form a roux.

                - Gradually whisk in the milk and chicken broth. Continue to stir until the sauce thickens (about 5-7 minutes).

                  - Lower the heat and mix in the cream cheese until smooth. Stir in the parmesan cheese and Italian seasoning. Season with salt and pepper to taste. Set aside.

                    Combine Filling Ingredients: In a large bowl, mix the shredded chicken, spinach, and 1 cup of the prepared white sauce. This will be the filling for the lasagna.

                      Assemble the Lasagna:

                        - In a baking dish, spread a thin layer of the white sauce on the bottom.

                          - Place a layer of lasagna sheets over the sauce.

                            - Spread half of the chicken filling over the noodles, then top with a layer of white sauce.

                              - Repeat this layering process: noodles, filling, sauce until all ingredients are used, finishing with noodles and a generous layer of white sauce on top.

                                - Sprinkle the shredded mozzarella cheese over the final layer.

                                  Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the top is bubbly and golden.

                                    Cool & Serve: Allow the lasagna to cool for about 10-15 minutes before slicing. Serve warm and enjoy!
