Ingredients

1 large head of cauliflower, cut into florets

½ cup of cream cheese (or Greek yogurt for a lighter version)

¼ cup of unsalted butter

½ cup of garlic-infused broth (or vegetable broth)

Salt and pepper to taste

1 teaspoon of garlic powder (optional)

2 tablespoons of chopped fresh chives or parsley for garnish

Instructions

In a large pot, bring salted water to a boil. Add the cauliflower florets and cook until they are fork-tender, about 8-10 minutes. Drain well.

In the same pot (or a large mixing bowl), combine the drained cauliflower, cream cheese, butter, and garlic-infused broth.

Using an immersion blender, food processor, or potato masher, blend/mash until you reach your desired consistency (smooth or slightly chunky).

Stir in salt, pepper, and garlic powder, if using. Taste and adjust seasoning if necessary.

Transfer the creamy cauliflower mash to a serving bowl, and garnish with fresh chives or parsley. Serve warm and enjoy!
