Creamy Cajun Shrimp and Chicken Pasta

Ingredients
  

8 oz. fettuccine pasta

1 lb. chicken breast, cubed

1 lb. shrimp, deveined and peeled

2 tablespoons Cajun seasoning

2 tablespoons olive oil

1 onion, finely chopped

3 cloves garlic, minced

1 bell pepper, diced (red or green)

1 cup heavy cream

1 cup chicken broth

1 cup cherry tomatoes, halved

1 cup spinach leaves

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (for serving)

Instructions
 

Cook the Pasta:

    Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside.

      Season the Chicken:

        In a medium bowl, toss the cubed chicken breast with 1 tablespoon of Cajun seasoning until well coated.

          Sauté Chicken:

            Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the seasoned chicken and cook for about 5-7 minutes, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

              Cook Shrimp:

                In the same skillet, add the remaining tablespoon of olive oil. Toss in the shrimp and the remaining Cajun seasoning, cooking for about 2-3 minutes on each side until they're pink and opaque. Remove the shrimp and set aside with the chicken.

                  Sauté Vegetables:

                    In the same skillet, add the chopped onion and bell pepper. Sauté for about 4-5 minutes until the onions become translucent. Add the minced garlic and cook for an additional 1 minute until fragrant.

                      Make the Sauce:

                        Pour in the chicken broth and bring to a simmer. Stir in the heavy cream and mix well. Allow the sauce to thicken for about 3-4 minutes, then add in the cherry tomatoes and spinach. Cook until the spinach wilts.

                          Combine Everything:

                            Add the cooked chicken and shrimp back to the skillet, stirring to coat with the creamy sauce. Season with salt and pepper to taste.

                              Toss with Pasta:

                                Finally, add the drained fettuccine to the skillet and toss to combine everything evenly, ensuring the pasta is well-coated with the sauce.

                                  Serve:

                                    Garnish with freshly chopped parsley and a sprinkle of grated Parmesan cheese on top before serving.
