Creamy Cajun Chicken Pasta

8 oz fettuccine pasta

2 tablespoons olive oil

1 pound chicken breast, sliced into strips

2 teaspoons Cajun seasoning

1 teaspoon smoked paprika

Salt and pepper, to taste

4 cloves garlic, minced

1 red bell pepper, sliced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

1 cup fresh spinach

2 tablespoons chopped fresh parsley (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

    Season the Chicken: In a bowl, toss the sliced chicken with Cajun seasoning, smoked paprika, salt, and pepper until well coated.

      Sauté the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken strips in a single layer and cook for 5-7 minutes until golden and cooked through, stirring occasionally. Remove chicken from the skillet and set aside.

        Sauté Veggies: In the same skillet, add the minced garlic and sliced red bell pepper. Sauté for 2-3 minutes until the pepper is tender and the garlic is fragrant.

          Make the Sauce: Reduce the heat to medium and pour in the heavy cream and chicken broth. Stir well to combine and bring to a simmer. Let it cook for 3-4 minutes until slightly thickened.

            Combine Ingredients: Stir in the grated Parmesan cheese until melted and smooth. Add the cooked chicken, spinach, and reserved pasta water to the skillet. Toss everything together until well combined and the spinach is wilted.

              Season to Taste: Adjust seasoning with additional salt and pepper if necessary. If the sauce is too thick, add a bit more chicken broth.

                Serve: Serve immediately, garnished with freshly chopped parsley.
